Asparagus Soup

Blend 6-8 stalks of asparagus, 1/4 c cashews, 1/2 c water, 2 cloves of garlic, juice of half a lemon and salt and pepper to taste.

Is there anyone who doesn’t dream of bowls of raw chocolate chip cookie dough?
It’s time to make that dream a serious reality.

Process 1 c almonds, until very fine. Add 1/2 c honey, 1/4 c coconut oil, and a dash or two of vanilla. Continue to process. If the mixture becomes very thin, as if it’s melting, you’ve got too much coconut oil. In that case, add more almonds to solidify.
Finally, add a large handful of cacao nibs and sea salt to taste. Process again briefly.
Refrigerate for 10 minutes or so and then mold into cookies.
Enjoy now or refrigerate for later. Repeat again tomorrow.

It doesn’t get much more simple than this:
Process about 1 c of almonds and set aside.
Process 1 1/2 c dried figs with juice from one lemon and a dash or two of cinnamon.

Spread this mixture on a plate and form into one or two long, thick rectangles.
Freeze for 10 minutes or so, cut into squares or whatever shape you’d like, and freeze again until you’re ready to eat.
Takes me right back to the days of shuffling through my parent’s cupboard for that late night snack!
Macadamia Nut Cheese:
Blend until smooth: 1 c macadamia nuts with your favorite seasonings (i.e. juice of half a lemon, basil, sea salt, pepper)
Pour mixture into a cheese cloth, cover, and let it sit for a couple of hours, to allow the excess water to drain and the flavor to ripen.

Slice up some tomatoes and avocado and top with spoonfuls of cheese. Add olive oil, salt and pepper to taste.
Store nut cheese in the fridge for a week or so… enjoy!
I wouldn’t dare suggest you eat something that doesn’t taste good, so trust me on this one.
Into the blender throw 1/2 an avocado, a bunch of kale, 1 frozen banana and about 1 cup of coconut water.
Your morning just got a whole lot brighter.

Mix: Romaine lettuce, kale, sliced green apple, sliced dried apricot, chopped raw walnuts, raw sunflower seeds
Dressing: process 1/4 c apple cider vinegar, juice of half a lemon, and 2 cloves of garlic
MMMMMmmm!

Chop 1 avocado and 1 mango.
Mix in a bowl with chopped cilantro.
Top with the juice of half a lime, sea salt and pepper.
Doesn’t get much easier than that, does it??
